Fijian Style Scallop Vakalolo

Ingredients

Serves 2 – 4 guests
  • 500gm shelled scallops
  • 50gm butter
  • 200gms Mango Pickle
  • Pinch of Saffron
  • Pinch of Chilli
  • Lime Leaf
  • Salt and Pepper
  • 500gms Coconut Cream

Method

  1. Bring all ingredients EXCEPT scallops to a boil in a pot.
  2. Pan fry scallops in butter until golden.

Plating Up

Put cooked scallops onto a warm plate and smother with sauce.
